Under the left stainless steel lid are the cast iron hot and simmer plates, under the compact right stainless steel lid is a fully controllable cast iron simmer plate, which can easily be turned off and on when needed.

The simple to use controls are situated behind the small cast iron door on the front of the cooker. All in all an extremely versatile and elegant cooker.
